Panera Bread: Focaccia Bread

Bake Time: 25 Minutes


Ingredients:
2 cups warm water (95-105 degrees F)
4 teaspoons fresh yeast
1/2 cup extra-virgin olive oil
3 cups all-purpose flour
1 cup dried potato buds
2 teaspoons salt
1 Tablespoon died rosemary or basil

Directions:
1.) Combine water and yeast in the bowl of a stand mixer. Stir to dissolve the yeast fully. Add the oil, flour, potato buds, salt and rosemary. Mix on low speed until all of the ingredients are incorporated and the dough becomes smooth in consistency (about 5 minutes). Pour half of the dough (it will be very wet) into a 9 x 6 x 1 inch aluminum foil pan sprayed with cooking spray. With your fingers, spread the dough out evenly in the pan, and brush the top with extra-virgin olive oil Preheat the oven to 400 degrees F and proof in a warm location for 1 hour and 30 minutes.

2.) Bake for 25 minutes, or until the crust is a deep golden brown and the middle of the loaf is 190-200 degrees F. Remove the bread from the oven and from the pan and place on a cooling rack for 30 minutes.
